Beta-Carotene: The Stability Star in Food Coloring

On the vibrant shelves of food products, color is the first element that catches consumers' eyes. From golden and tempting potato chips to bright orange jams, behind these rich colors lies the indispensable role of food colorants. Among them, beta-carotene stands out as a top performer in the field of food coloring, particularly noted for its exceptional stability, bringing numerous conveniences to the food industry.

Stability is an extremely crucial characteristic for food colorants. From production and processing to the final purchase and consumption by consumers, foods undergo complex processes and long durations. During this period, colorants must withstand multiple tests such as temperature changes, fluctuations in pH levels, and exposure to light, maintaining their color stability to ensure that foods always look good. Beta-carotene excels in this aspect.

During food storage, the stability of beta-carotene is equally critical. Many foods need to be stored for extended periods under room temperature or refrigerated conditions. At room temperature, some foods may experience color changes due to oxidation or microbial action. However, beta-carotene has certain antioxidant properties, which can delay its own and the food's oxidation process to some extent, maintaining color stability. For refrigerated foods, although lower temperatures can inhibit microbial growth, they may affect the performance of some colorants. Beta-carotene, however, is less affected by low temperatures, ensuring that foods maintain their original vivid colors throughout refrigerated storage. For instance, when added to refrigerated orange juice, even after several days in the fridge, it remains brightly colored, allowing consumers to enjoy the charm of fresh juice each time they drink.
Beta-carotene also demonstrates good adaptability in different pH-level food systems. Acidic foods like yogurt and tomato sauce typically have a pH value below 4, while alkaline foods like certain noodles can reach a pH of 8-9. Beta-carotene maintains relatively stable chemical structures within this broad range of pH levels, continuing to perform its coloring function. During yogurt production, as fermentation lowers the yogurt's pH, beta-carotene does not change color or precipitate in acidic environments but remains evenly dispersed in the yogurt, adding a natural creamy yellow hue and enhancing the visual quality of the product.
The outstanding stability of beta-carotene brings significant economic benefits to the food industry. It reduces the appearance defects caused by unstable colorants, lowers defect rates, and saves production costs. Moreover, stable colors increase consumer trust and satisfaction with products, promoting sales and driving the healthy development of the food industry.
