Physical and chemical properties:
Monascus red mainly has 6 kinds of color components, which are divided into red pigment (erythema or pan red, molecular formula C21H22O5, relative molecular mass 350), monascus or Mengnayuhong (molecular formula C23H26O5, relative molecular mass 382), Yellow pigment (monascus or Mona red, molecular formula C21H26O5, relative molecular mass 358), monasflavin or ankaflavin (molecular formula C23H30O5, relative molecular mass 386), purple pigment (erythema or paneramide, molecular formula C21H23NO4, relative molecular mass 353) and monascus amine or monazolamine (molecular formula C23H27NO4, relative molecular mass 381).
Monascus pigment is dark purple-red liquid or powder or paste, slightly odorous, insoluble in oil and non-polar solvents, in the medium below pH 4.0, the solubility is reduced, easily soluble in ethanol, propylene glycol, glycerol and their aqueous solutions. The melting point is 160-192 °C, the maximum absorption wavelength of the aqueous solution is 490 ± 2 nm, and the maximum absorption wavelength of the ethanol solution is 470 nm. The solution is bright red when it is thin, and dark brown and fluorescent when it is thick. It is stable to environmental pH and is hardly affected by metal ions (Ca 2+, Mg 2+, Fe 2+, Cu 2+), 0.1% hydrogen peroxide, vitamin C, sodium sulfite and other oxidants and reducing agents. It has strong heat resistance and acid resistance, and its alcoholic solution is quite stable to ultraviolet rays, but it can be faded by direct sunlight. Excellent protein coloring performance, once dyed, it will not fade.
Stability: Monascus red pigment is unstable to light, and will gradually decompose under sunlight, ultraviolet light and visible light. Under the condition of natural light irradiation, the preservation rate of the pigment dropped to less than 50% in less than 14 hours. Under direct sunlight (31-38°C) for 2 hours, half of the pigment was lost. Under irradiation for 5 h, the absorbance did not change.
